Rhubarb Cake in a Snap
- 1 2 layer package white cake mix
- 2 cups diced rhubarb
- 1 1/4 cups white sugar
- Preheat oven to 350 degrees F (175 degrees C). Butter and flour a 9×13 inch pan and set aside. Prepare white cake mix according to directions and then pour into pan.
- In a mixing bowl, combine the rhubarb and sugar and then spoon the fruit mixture over the cake batter.
- Set timer for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely before turning it out onto a serving dish.
- Serve with dollops of whipping cream

Snowman Pancakes
I thought that the kids might like this idea… and Saturday is coming.
Use your favorite pancake recipe and then spoon batter onto a hot griddle to form the body of the snowman. You should have three pancakes, each graduating in size as would be found on a honest-to-goodness snowman and connected to the one above. Decorate with pretzels for the arms and candy bits for the buttons. For the nose… I’m kind of stuck!

Where is that water bottle? I hope that it is sitting with you, right now.
From experience, I have noticed that I am more apt to sip the water than head to the kitchen for a snack, if the bottle is handy. If it’s not, you guessed it… I head for the kitchen. I think that on a cold day like this, keeping a mug of herbal tea might work as well. I was about to make a pot of coffee, but I’m going to re-think that idea. I like cream in my coffee… tea I can drink clear.
Valentine Bath Salts
Check out the dollar store for a pretty jar that can be layered with white scented bath salts and red bath oil beads. Makes for a very inexpensive little gift for your Secret Sister.
1 cup sea salt
3/4 cup Epsom salts
1/3 cup of baking soda
Drops of essential oil (see below)
Combine all of the above and then add a few drops of your favorite essential oils in combination until you have a scent that is just to your liking.

It’s hot where I’m vacationing at the moment and I’m craving smoothies. Actually, I had a great one yesterday at the mall. It was a combination of cranberry, banana and strawberry. While I don’t know the recipe for that one, I did find this one buried in my recipes to try file. It should take about 10 seconds to put it together! My kind of recipe!
Ingredients
1 8-ounce cartons plain fat-free yogurt
1 ripe small bananas
1 cup frozen unsweetened berries
Did you notice that there is no added sugar in there at all!
